Abstract
Mildred Kaufman earned her BS degree in 1947 from Simmons College and her MS degree in nutrition from Columbia University Teachers College in 1952. She was a past professor and chair at the University of North Carolina – Chapel Hill’s Department of Nutrition. In this oral history interview, Kaufman discusses her time as director of nutrition services and programming for the Florida public health system. She explains how she assisted with the development of a generalized nutrition program, the role of advocacy in promoting services to maternal, child, and migrant populations, and the importance of developing legislative lobbying skills. During this interview, she also describes the challenges and benefits of the Women, Infants, and Children (WIC) program in the state of Florida and the importance of developing a structured program of career development and education for county nutritionists.
