Abstract
Jim Garris, Operations Manager, Columbia Restaurant Ybor City, discusses the restaurant's history. The interview begins with a discussion of how Mr. Garris met Casey Gonzmart (late 1980's) and Mr. Garris' initial impressions of him. Mr. Garris describes his first position with the Columbia Restaurant as an assistant manager of the Sand Key location (December, 1989), and discusses the Columbia Restaurant Spanish Cookbook , noting that Richard Gonzmart was instrumental in making the restaurant the commercial success it is today. The interview continues with a brief personal history of Mr. Garris and ends with a discussion of current (2006) management policies at the various restaurant locations.
