Abstract
Joe Roman, a retired waiter from the Columbia Restaurant in Ybor City, Florida, reminisces about working at the restaurant since 1953. The interview begins with a discussion of Mr. Roman's childhood in Tampa, Florida, his memories of Tampa in the 1930s, and his beginnings in the restaurant business. Mr. Roman describes the early days of the Columbia Restaurant and the changes that occurred during his time there. The interview ends with Mr. Roman discussing some of his favorite dishes served at the Columbia.
