Abstract
Casey Gonzmart, a 4th generation owner/operator of the Columbia Restaurant Group, discusses the history of the Columbia Restaurant. Mr. Gonzmart describes his family's history, his Cuban and Spanish heritage, and growing up in Ybor City. He also describes the early years of the Columbia Restaurant and his role in its development. The interview continues with an in-depth discussion of his family's recipes and the Columbia's menu. The interview ends with Mr. Gonzmart discussing the great success of Adela Hernandez Gonzmart's cookbook entitled The Columbia Restaurant Spanish Cookbook.
