Abstract
George Guito, General Manager of the Columbia Restaurant in Ybor City, Florida, reminisces about his time working at the restaurant. He began working at the restaurant in 1962 as a member of the cleaning staff. Within a couple of years he was given the opportunity to attend school and was trained to be a butcher, eventually working in the Columbia's kitchen. Mr. Guito describes the atmosphere growing up in Ybor City and how the area has changed over the years. There is also a discussion of the Gonzmart generations and their different management styles. The interview ends with Mr. Guito discussing his personal menu favorites and how much he has enjoyed working for the Gonzmart family.
